Spiced Pear Mimosa

  • 5 firm pears, Asian or Bosch
  • 1 bottle of your favorite Malbec
  • 1 cup brown sugar
  • 1 ea cinnamon stick
  • 1 ea star anise
  • 5 ea juniper berries
  • zest of 1 lemon
  • 1 tblsp black peppercorns
  • 1 tblsp salt
  • Cheesecloth and Twine

Combine cinnamon, star anise, juniper berries, peppercorns, and lemon zest into cheesecloth and tie off well (this is called a sachet). Bring wine, sugar, salt and sachet to boil in a heavy-bottom saucepan. While this is heating, peel pears whole while leaving the stem on. Add pears to the boiling liquid and simmer for 15 minutes. Remove from teh heat and let cool to room temperature. Put in a sealed container and allow to sit in poaching liquid overnight, adding a plate over the top for weight to keep them submerged, if necessary. Remove pears from liquid, slice, and set to the side. Use the remaining liquid to add to Perrier Jouet Grand Brut or your champagne of choice. You can add the pears as a garnish or incorporate them into another dish you are serving at your meal!
